I like it that way best and no-one seems to care either way. If you want a rustic kind of look (or just really couldn’t be bothered) then leave the skin on. The thicker they are, the longer they take to cook. You know how much I hate doing dishes and well we all know how you seriously have to soak most scalloped potato pans for practically a week to get that baked on goodness off and who has time for that. Preheat oven to 350 F and spray muffin tin with oil. There are very few people I know that don’t like scalloped potatoes and let’s just say we’re not close.
